Muffin alla Banana Croccanti Stampa E-mail

Ingredienti:Banana Crumb Muffin

1 1/2 tazze di farina (circa 190 gr)
1 cucchiaino di bicarbonato
1 cucchiaino colmo di lievito per dolci
1/2 cucchiaino sale
3 banane mature schiacciate
3/4 tazza di zucchero bianco (150 - 170 gr)
1 uovo leggermente sbattuto
60 gr burro sciolto o 80 ml olio extravergine d'oliva

1/3 tazza di zucchero di canna (circa 70 gr)
1/8 tazza di farina (circa 15 gr)
un pizzico di cannella
1 cucchiaio di burro

Preparazione

  • Scaldare il forno a 190°C.
  • Oliare o imburrare keggermente la teglia per 10 muffins o preparare 10 pirottini di carta.
  • In una grossa terrina amalgamere bene la farina, il bicarbonato, il lievito ed il sale.
  • In un'altra ciotola sbattere insieme le banane schiacciate con zucchero, uovo e burro sciolto.
  • Versare il composto liquido nella farina e amalgamare solo fino a che il liquido non venga assorbito. Non mischiare troppo.
  • Riempire ciascun pirottino fino a 2/3.
  • In una ciotola mischiare insieme lo zucchero di canna, la farina e la cannella. Aggiungere il burro a pezzettini e mischiare con la punta delle dita fino ad ottenere un composto grumoso. Versarlo su ciasun muffin.
  • Cuocere nel forno preriscaldato circa 18-20 minuti o finchè uno stozzicadenti inserito nel centro ne esca asciutto.
